Update: Fish & Game opening May 15 in Hudson

Update: The latest addition to this Columbia County city's impressive restaurant lineup will debut on Wednesday, May 15. That's when Fish & Game, created by chef Zak Pelaccio, will open its doors to provide something different on the local dining scene. He will be serving a single five- to seven-course meal daily, with prices and ingredients varying depending on availability of local products. HUDSON -- Zak Pelaccio of the popular Fatty Crab restaurant group in New York City reportedly will be opening a venue in this Columbia County restaurant city in October.

Pelaccio, who has Fatty Crab restaurants in the West Village and on the Upper West Side as well as on St. John in the U.S. Virgin Islands,  will open on or near the Warren Avenue restaurant row here.

It is doubtful, though, it will be a Fatty Crab location, which specializes in small-plate Malaysian food and specialty drinks.

Pelaccio, 37, who trained at the French Culinary Institute, has traveled widely in Asia, as well as spending time as a cooking instructor and cookbook author ("Eat With Your Hands," Ecco Publishing) and also uses recipes developed by his parents, who lived in Italy before he was born.

Add to that the talents of his longtime collaborator and (recently wed) wife, Jori Jayne Emde, and the possibilities in Hudson are broad.

She is a writer (I recommend her blog) as well as an experimenter who makes and sells her own Worcestershire sauce, which is fermented in used rye whiskey barrels, under the Lady Jayne’s Alchemy brand, as well as other fusions, emulsions and fermentations.

Pelaccio and Emde are part-time Columbia County residents.
