Former Springwater becoming casual restaurant

SARATOGA SPRINGS -- The building that has been home to the Springwater, Springwater Bistro and The Turf Club, among other incarnations, is in the process of becoming a neigborhood restaurant called The Brook Tavern.

Springwater. Brook. Hmmm, sensing an aquatic theme to names lavished on the 139 Union Avenue Victorian structure? Not really, It's more of a family history thing. The developer is Bob Lee, whose family has owned The Wishing Well in Wilton for 45 years. The Brook was the name of a restaurant the famiy worked for before going into business for themselves.

Lee told the Times Union he has signed a five-year lease on the building with owners Peter and Leslie DiCarlo, who ran it as The Springwater Inn during two different stints.

The menu is being developed by Patrick Longton, executive chef of The Wishing Well, though another chef will be hired to run the tavern on a daily basis, according to Lee says. Interior renovations by local designer Beverly Tracy are in the works.
