Prominent Berkshires chef issues second cookbook

Fans of one of the Berkshires' top chefs will be interested in his latest project: a cookbook that shares some of his most prized recipes.

Michael Ballon, chef-owner of Castle Street Café and a pioneer in the region's farm-to-table movement, has just released "A Chef's Life: Farm-to-Table Cooking in the Berkshires."

The 140-page paperback is his second cookbook. His first was "The Castle Street Café Cookbook," published in 2008. Both are available on the Castle Street website or from the usual online booksellers.

In his new work, Ballon includes an original menu from his restaurant in 1989 which included the names of the farmers and food producers whose ingredients were used. That was years before that became a popular idea in the "locavore" world. Overall, the book is a collection of highly-opinionated essays dealing with celebrity chefs, molecular gastronomy, among other topics, leavened with corresponding recipes.
