Chez Mike latest to debut a fall menu

EAST GREENBUSH -- The rollout of fall menus continues, with one of the latest coming from Chez Mike.

Chef-owner Mike Cohen's latest set of imaginative dishes contains such items as arugula salad with smoked gouda, cranberries, red onions, pecans and maple-mustard dressing; Buffalo style veal sweetbreads with celery-Asian pear salad and gorgonzola dressing; lamb ragout with baked polenta, spinach, kalamata olives, capers and Maplebrook feta cheese; and, New England style seafood chowder with littleneck clams, shrimp, haddock, sea scallops, diced potatoes and applewood-smoked bacon.
