For one thing, the menu has been vastly reduced, from nearly 60 entries to about 15. They also may notice the absence of two other items -- the boss and the head chef.
The new head chef at Cornell’s is Jake Zachow, formerly of Wheatfields in Saratoga Springs.
Joanne Cornell Aragosa owned her family's restaurant from 1997 to 2011 when she sold it to former Daily Gazette publisher John Hume III, his wife Connie, and George Ryon. She had been running it since then but, along with head chef Armondo Cioccke, recently left following a disagreement with the owners.
Both now are working at Villa Tuscan Grille -- formerly the Roman Villa -- at 273 Duanesburg Road in Rotterdam. Cioccke is buying it from local politician Peter Guidarelli. Cioccke's new menu there is available online, and is much like his menu at Cornell's.
