4-event series added to the 'Cooking Classes' calendar
It's a four-Tuesdays program, scheduled for January 19 and 26, and February 2 and 9, from 6 to 9 p.m. each day. The fee for the full schedule is $220 per person, which covers instructions and wine. Details:
• January 19, "Basics" -- Learn or refresh your knowledge of knife handling, safety, and basic cuts, then make chicken stock, soups, and salad.
• January 26, "Sauces" -- Learn the five "mother" sauces -- béchamel sauce (for mac and cheese), Espagnole sauce (for beef bourguignon), tomato sauce (for pasta marinara),veloute sauce (for chicken supreme), Hollandaise sauce (for steamed asparagus).
• February 2, "Cooking Meat, Poultry, and Seafood" -- Learn how to properly season and cook meat, poultry, and seafood by braising, grilling, pan-searing, roasting, baking, and sautéing.
• February 9, "Vegetables and Starches" -- Learn how to prepare vegetable dishes and starches to complement any meal.
