Former Quintessence chef to teach diner's signature items

For decades, the Quintessence diner near Albany Medical Center served up its inexpensive signature teriyaki chicken, green spinach noodles, and salad with vinaigrette to thousands of AMC staffers, students from nearby colleges, and anyone who wanted to experience the icon's Art Deco interior.

Quintessence closed several years ago, and the silver diner that housed it has been dismantled and carted off the New Scotland Avenue lot. But, that doesn't mean you have to go without those popular dishes.

Former Quintessence chef Donnie Graham has been signed up to teach his dishes at The Cooking School @ Market Bistro in Latham. The class is scheduled for 6 to 8 p.m. Thursday, January 14, with registration priced at $50. You can find a link to that class on my "Cooking Classes" online calendar.
