Roux debuts monthly tasting menu special

Chef Michael Mastrantuono is getting an opportunity to stretch his wings beyond his normal menu at the Slingerlands restaurant Roux.

The bistro is offering a chef's table tasting menu, changing monthly, in its private dining room for patrons willing to reserve at least two days in advance and pay $65 per person. What they will get in return is a six-course dinner that can be amped up with wine pairings for an extra $35 per person. Prices do not include tax and tip.

This month's menu will give you an idea of Mastrantuono's mindset for these events: 
1st Course 
Buttermilk fried oysters
leeks, foie gras butter, ponzu, caviar
Pairing: Chandon Brut by Moet & Chandon  

2nd Course 
Winter vegetables
homemade goat's milk ricotta, honey, pistachio brown butter
Pairing: Barton & Gustier Rose d’Anjou  

3rd Course
Himachi baby yellowfin crudo
bacon bits, yuzu, Thai BBQ agrodolce, serrano chilies
Pairing: Ramon Bilbao Albarino  

4th Course
Scottish salmon
butter poached, Jonah crab, white beans, frisee, beurremonte sauce
Pairing: La Scolca Gavi Di Gavi White Label  

5th Course
Prime lamb loin
red miso, mustard, parsnip puree, black garlic ketchup
Pairing: Sbirolo Nebbiolo by Marchesi di Barolo  

6th Course
Bread pudding
fresh blackberries, nocetta di capra goat cheese, housemade custard
Pairing: Penfolds Father Tawny Port
