Chef vacancy quickly filled at The Capital Bistro

In one of those quick-hit personnel moves that take at least the public by surprise, The Capital Bistro in Albany was left without an executive chef even though it had just hired one several months ago.

Matt Hughes quit last week, co-owner Chris Pratt tells the Times Union, so he has elevated Gabe Pollow, No. 2 since March, to the role. Both chefs are alums of Ric Orlando's New World Bistro Bar in Albany, and under their brief tandem tenure The Capital Bistro earned a good review from the TU.

Pollow moved from the New World Bistro Bar to its catering service before leaving to briefly, as it turned out, become head chef at Fin - Your Fishmonger in Guilderland in 2015.

The restaurant, originally named The Capital American Eatery & Lounge, is located at 55 North Pearl Street. Hours: Open for dinner from 5 p.m. Monday to Saturday. Phone: (518) 694-3122.
