Our House Bistro. Sure, we have plenty of bistros in the Greater Capital Region, but not like Our House which features 30 different kinds of macaroni and cheese. The only time I get to be confronted with that many versions at one time is when I judge the annual Mac 'n' Cheese Bowl.
Well, the good news is that Our House is expanding into New York State. The bad news -- except for my readers in the northernmost reaches of the region -- is that its chosen site is in downtown Plattsburgh, not a place I visit very often, and no closer to us than is Winooski.
Owners Matthew Pearsall and Maggie Barch, who also operate VT Spice of Life Catering, have come up with a wildly imaginative array of mac-and-cheese concoctions such as Sugar Shack Mac with maple bacon, fried onion and maple bourbon; Polynesian Mac topped with coconut shrimp; and Peanut Butter & Jelly Thai-style mac. Also, lobster mac, jambalaya mac, beef and bleu mac, pumpkin eater mac, nutty New England mac, and on and on. Curiously, when the restaurant was founded it had zero mac-and-cheese dishes on the menu.
The couple chose Plattsburgh after considering several other possibilities, including Boston, picking the little city (barely 20,000 population ) on the west shore of Lake Champlain because it is embarking on an ambitious downtown revitalization effort.
